Bright Beetroot and Herb Salad



It was hot in LA.

There was also lots to do.

As much as I really love cooking, all I wanted to do was to be out and about, eating light, quick and satisfying.

This salad is super quick and so good for you. It only has a few ingredients, but you could so easily add  any veg or protein.



The salad stars grated beetroot, half a lemon, salt, oil, freshly chopped coriander and parsley and purple kale. You could easily use silver beet, spinage or italian cabbage in place or the purple kale or as an addition!

Its fresh and yum!
