Soup Of The Week: Mixed Mushroom Soup


My Mix Mushroom Soup was a special guest at my Feast Fiesta Forever dinner party.

There was such a great mix of flavours that night, but this soup was especially savoury and rich.
I highly reccomend using any mushrooms you can get your hands on for this recipe- the more the merrier and the better for you!

There was a special ingredient in the soup that helped along in the savoury and rich tasting department. Savoury Yeast Flakes are the best thing you can have in your panrty if your vegetarian or vegan and once enjoyed eating cheese.

Savoury yeast flakes are, yes savoury, but they are also packed full of all B vitamins- including B12!!
* you can get these bad boys at healthfood stores and organic wholefood stores.

MIXED MUSHROOM SOUP


What you need:

1 bag flat mushies
1 bag button mushies
2 tblsp savoury yeast flakes
1/2 cup brown rice
1 brown onion chopped
1 small leek chopped
1 lime
veggie stock to your desired volume/thickness/soupiness (I used hippopotamus soup)

What you do:

**Now this soup might sound time consuming and difficult- but its not!! It's very easy and only takes about half an hour to make, including prep time. Yay!

Add your onions and leek to a pot with oil and cook on high for a couple of minutes. Add a bit of salt to stop them from frying.

While they're cooking, rinse the brown rice, the place into a blender with a cup of water, then blitz for a few minutes.

When this is done, put aside and begin to tear up the mushies, adding them to the onions and leek. Once you're out of mushies, pop a lid on the pot and lower the heat for about 5-10 minutes.

While they bubble away, grab a frying pan, put a little butter and oil and the yeast flakes and drained blitzed rice and salt into the pan, stir then chuck a lid on top and leave for about 3 mins- heat on high. After the 3ish mins are up, squeeze the lime juice over the rice and scrape all the flavour from the bottom of the pan. Turn off heat.

Uncover the mushie mix and add the veggie stock of your choice, add the rice mix, then bring to the boil and simmer for about 20 mins.

SERVE!!
