I have ANOTHER amazingly quick, fresh, delicious and beautiful spring salad for you today.
It travels well, so make it to take with you through the day, or make it in the morning, pop coverd in the fridge for dinner- although it's so fast to prepare and make and tastes better at room temp- so this is'nt necessary :)
Welcome my SPRING BEAUTY, NEW RAW SALAD
What you need:
2 asparagus spears
a couple cherry tomatoes (get a mix of varieties)
1 red cabbage leaf
flat leaf parsley
a few baby celery stalks
1 boc choy bulb
What you do:
Give everything a good wash, then slice the toms & red cabbage, chop celery and boc choy, ribbon the asparagus with a potato peeler. Mix all ingrediants with a squeeze of half a lemon, drizzle of oil and sprinkle of sea salt.
