Soup Of The Week: Pea, Asparagus & Broadbean Soup

"It's not easy being green"...  Oh Kermit.. It is!!

Well, it's easy eating green- especially in the form of a yummy soup!

This soup is lovely warmed, but I really enjoyed eating this soup cold, which I'm also looking forward to in the summer months!

This is a very quick and easy soup and could be made completely raw, which I will do as the season gets warmer- Yay!

So without further ado...

PEA ASPARAGUS & BROADBEAN SOUP



What you need:

1 kilo peas
1 bunch asparagus
1 cup fresh broadbeans podded
1 red onion
1/2 head of ice berg lettuce
2 oranges

What you do:

Prepare broadbeans by genlty blanching, then de-pod and if you can be bothered, peel off the skins.

Finely chop onion and saute in pot with a bit of oil. After about 5 mins add the asaragus roughly chopped, stir and cook for a couple of minutes, season with salt and top with boiling water from the kettle.
When the liquid starts to bubble, add the lettuce, mix in, then add the peas, let the heat rise gently, then  remove from heat.

Season to taste then blitz.

When the soup is smooth, add the juice from 2 oranges and serve!

That's it!

*do not over cook this soup- it with be yuck, so when reheating, watch closely and don't boil.
