Twice Cooked Spuds with Charcoal Cauliflower Crumbs

BON WEEKEND!!!

Here's the lucky last recipe From my dinner party that I'm gonna share with you today. (the only remaining recipe is my mixed mushroom soup which will be this weeks SOUP OF THE WEEK- so you'll just have to wait!!)

I love potatoes!!! They are so great for you, but I'm not going to over load you today with all the details on how good they are ( I'll get there)- this is because its SUCH a beautiful day today and you need to get cracking with a dinner party of your own!!!

TWICE COOKED SPUDS with CHARCOAL CAULIFLOWER CRUMBS



What you need:

a kilo of big spuds (pick your favourite)
1/4- 1/2 head of cauliflower
1/4 red onion

dukka to serve

What you do:

Pre heat the oven to 200 degrees.

Cut your spuds in half or quaters, depending on how large they are.
Par boil in salted water. (about 15-20 mins)

Chuck into a roasting tray with the red onion (just slice it), drizzle with oil and spinkle with salt, then pop into the oven for about 30 mins.

During this time, chop the cauliflower up very finley, then in a pan with a bit of salt, cook on a high heat, continually stirring until it gets nice and charcoal-ey.

Pop the potatoes into the serving dish, spinkle with cauliflower & dukka then serve!!

It's sooooo good.
