Purple carrot's: My Super Easy, Super Quick, Super hero Salad



Sorry everyone... This dish should have been the very first entry and recipe I shared with you. This is the dish that beautifully compliments the radiant purple carrot!!
Purple carrot is my muse when it comes to photographing food. Yes, I know I should like a fruit loop weirdo, but this humble root vegetable is simply stunning.

When in season its always a go to raw snack for me- especially when I'm in rehearsals or on set.

Did you know that purple carrots were grown wild 5000 years ago and only took on the vibrant orange colour we're accustomed to in the 1500's when Dutch carrot growers morphed the carrots colour in an attempt to nationalise their favourite vegetable. So, the Purple carrot is the original prankster.



The orange carrot took over the world and shoved the purple beauty to the dark shadows of, um, under the ground.

Carrots are an amazing source of vitamin A & phytochemicals such as carotenoids, phenolics, isocoumarins and sesquiterpenes. What the blurg!?

Well, phytochemicals are plant chemicals that have antioxidant, anti-bacterial, anti-inflammatory  and other disease preventative and super power properties.

Not only does the beauteous purple carrot contain all these things, but they also contain more beta-carotene and 28 times MORE anthocyanins (??!!)- a potent antioxidant that paints the roses red. I mean purple.. & carrots.

Any way, enough faffing about...

Onto the recipe!!

MY SUPER EASY, SUPER QUICK, SUPER HERO SALAD



Here's what you need:

a purple carrot ribboned
a couple boc choy leaves torn
handful of flat leaf parsley & coriander leaves
1/4 cup sunflower seeds toasted
tiny drizzle of the oil of your choice

Thats all you need!!

Heres what you do:

Put a pan on high heat and gently toast the sunflower seeds.
When toasted to your desired toast, pour them onto a plate to cool.

Grab your carrot. Grab a peeler. Lay the carrot on your bench, then peel the carrot from top to bottom- don't move your carrot around, just keep peeling over the same spot.

Mix all ingredients in a bowl.

Serve with a sprinkle of salt and a wedge of lemon.

DONE. EAT. ENJOY.



This super quick and super beautiful salad is perfect to sit on the side of anything you through at it.

The ingredients are designed just for one hungry actor.. so if you have a friend, double, triple, quadruple the ingredients. Also try adding beetroot leaves, fennel & chilli flakes.
