Massaged Kale

Since reading a recipe on My New Roots (mynewroots@blogspot.com.au) about the benefits of massaging your kale, I've been dying to try it.

Luckily I had a seasoned professional creating with me in the kitchen. Yes, this is another recipe from the famous dinner party and again this is the genius child of Sunday.

It's very easy, quick, raw and can be eaten immediately, or better still, if made before all the other meals it will get better the longer you leave it to relax.

Once kale is massaged, it's cellulose structure breaks down and wilts so you're left with silky sweet slivers of kale. Breaking down the cellulose structure will in turn make the kale easier and quicker to digest! Which is great alongside a banquet of delicious food.

We were undecided as to what incredible nuts, seeds, veggies and flavouring we were going to add to this bad boy- but then we realised it would be soooo much better to let the kale fly solo and sing to us all. I'm glad we did.



MASSAGED KALE

What you need:

1/2 bunch kale
1/2 bunch italian cabbage
1-2 lemons

What you do:

Chop the kale and cabbage into strips and place into a big bowl.
Massage the veggies by rubbing them inbetween your fingers.

Squeeze the lemons to taste, season with sea salt and drizzle with oil.

EAT NOW or wait a while and it will get better!!

This is super quick and would make a great side to any dish or mixed through pasta (try and find black bean spaghetti- it's AMAZING and would go really well with this dish!).

*This would also be a great booster meal after a big yoga session and will keep relly well if you need to pack a luch box and take to rehearsal or as a pre performance dinner.
